SLOW LIVING LIFE HACKS: Why I grow mint and 3 ways I use it at home

Sustainability is not just something that I strive for in my brand values. It’s a way of life. Living slow, minimising waste and creating things with my own hands is how I was raised. It’s part of me.
Growing things is part of this slow approach to life. But you don’t need to live on a farm to do this. I love growing herbs. They are so great to put in salads, soups, stews, to add fragrance to roasts and as a garnish on everything. They make the garden smell amazing and give me feeling of closeness to the cycles of nature. Herbs are also very easy to grow. Mint in particular is ridiculously easy. It will basically grow anywhere and everywhere and you don’t need to have a garden. You can grow it on a windowsill.
There are 3 ways I use mint on a weekly basis. See below my simple, no fuss mint recipe’s.
FRESH MINT TEA:
Pluck the leaves from the stem and tear them into small pieces to release their aroma. Place them into a tea pot or mug. Pour over boiling water and let steep. You can also add fresh chopped ginger and/or Lemon slices. Viola! Fresh mint tea.
MINT INFUSED WATER:
Pick long stems of mint and rinse them. Leave the leaves on the stem. Place the stems into a glass jug of fresh water. Leaving the leaves on the stem makes it easier to pour. The leaves remain on the stem instead of floating to the top of the jug and also looks quite beautifully presented this way. The glass jug magnifies and showcases the mint. You can also add slices of fresh cucumber to this. Mint and cucumber infused water is delicious!
GREEN PEA, ALMOND AND FETA, MINT SALAD:
The title of this salad says it all. It’s that simple. I like recipes with few ingredients. This recipe is my own creation and changes depending on my mood so the recipe is not precise and you can improvise to your taste. This is the basis of it. You sort of can’t go wrong with the amounts when working with such beautiful and simple ingredients.
Ingredients:
I x bowl of frozen garden peas or baby peas - thawed.
A handful of crushed almonds
A handful of crumbled feta cheese
A handful of fresh mint leaves, rinsed and roughly chopped
A dollop of Olive Oil
A dollop of Apple Cider Vinegar
Salt and pepper seasoning to taste
Method: Throw all ingredients into a bowl and mix and enjoy!
Notes: I crush the almonds in a brown paper bag with the base of a wine bottle, a rolling pin, or a bottle of olive oil. Any thing heavy. Feta cheese is hand crumbled.
